          Low Carb Crunchy Crackers

          1 x 80g pack Simply Swap Foods Wrap Mix

          ¼ tsp fine sea salt

          ¼ tsp ground black pepper

          2 tblsp extra virgin olive oil

          2 egg whites

          ¼ cup water

          (optional variations listed below)

          Preheat oven to 180°C fan-forced and line large baking tray with non-stick baking paper.

          1. Empty entire contents of wrap mix into bowl.

          2. Add the remaining dry ingredients and mix well.

          3. Add wet ingredients to dry ingredients and stir well to combine into a dough.

          4. Turn dough onto sheet of non-stick baking paper from lined tray, top with another sheet of non-stick baking paper and pat into a rough rectangle shape. Use a rolling pin to roll as evenly as possible until approx. 2-3mm thick all over. Remove top layer of baking paper.

          5. Use a sharp knife or pizza cutter to score into crackers of preferred sizes - large 8x4cm or small4x4cm work well.

          6. Slide baking paper with sliced cracker dough back onto tray and bake for 25-30 minutes or until the edges are golden and crisp.

          7. Remove from oven, let cool for a few minutes on tray then break apart into pieces to cool on wire rack. Crackers will become more firm as they cool.

          Optional variations:

          Add ⅓ cup grated fresh parmesan cheese to dry mix before adding wet ingredients

          Add 1 tsp onion powder to dry mix before adding wet ingredients

          Add 2 tsp dried Italian herbs to mix before adding wet ingredients
