This is a delicious icing, great to use on many cakes and muffins. Use cocoa powder for chocolate buttercream or omit and add extra vanilla for vanilla buttercream.
125g butter, softened¼ cup Lakanto Monkfruit icing sweetener
2 tsp vanilla essence (plus extra tsp for vanilla variation)
2 tblsp cocoa powder (for chocolate variation)
Stevia drops (to taste)
- Place butter in a medium size bowl and beat with hand beater while adding spoonfuls of sweetener. Beat well after each addition and blend together until light and fluffy.
- Add cocoa powder and vanilla and continue beating on low speed until well combined, scraping down sides of bowl where necessary.
