          Keto Buttercream Icing - Choc or Vanilla - Low Carb

          Keto Buttercream Icing - Choc or Vanilla - Low Carb

          This is a delicious icing, great to use on many cakes and muffins. Use cocoa powder for chocolate buttercream or omit and add extra vanilla for vanilla buttercream.

          125g butter, softened
          ¼ cup Lakanto Monkfruit icing sweetener
          2 tsp vanilla essence (plus extra tsp for vanilla variation)
          2 tblsp cocoa powder (for chocolate variation)
          Stevia drops (to taste)
           
          1. Place butter in a medium size bowl and beat with hand beater while adding spoonfuls of sweetener. Beat well after each addition and blend together until light and fluffy.
          2. Add cocoa powder and vanilla and continue beating on low speed until well combined, scraping down sides of bowl where necessary.
